Bonus Passus is a red wine inspired by the medieval history of Châteauneuf-du-Pape, whose name refers to the ancient fortress built by the Knights Hospitaller in the 13th century to secure passage across the Durance River. Made primarily from Grenache Noir, accompanied by Syrah and Mourvèdre, it comes from vineyards located on south- and southeast-facing slopes, on the sandy and stony soils characteristic of the region. Vinification is carried out through co-fermentation of the varieties, combining traditional Rhône techniques such as cap immersion at the end of fermentation, allowing for gentle extraction and greater aromatic expression. After a three-week maceration, the result is a balanced wine in which structure and finesse coexist in harmony. On the nose, it displays a complex aromatic palette with notes of cherries in liqueur, mild spices, and hints of blond tobacco. On the palate, it is silky, with flavors of ripe plum and a fresh touch that lengthens the finish, bringing elegance and depth.
