Finca Montico is a single-varietal white wine made from 100% Verdejo, sourced from a vineyard over 50 years old located on one of the highest terraces of La Seca, which brings balance, concentration, and character.
The harvest is carried out manually in crates. Upon arrival at the winery, the grapes are cooled and undergo a double manual selection process, first of the bunches and then of the berries. The whole grapes are pressed without destemming and under an inert atmosphere, yielding a low-volume, high-quality must. Fermentation is carried out exclusively with indigenous yeasts. After an initial racking, the wine remains on its fine lees, which are periodically kept in suspension, adding greater volume, creaminess, complexity, and aromatic stability.
It shows a greenish-yellow color. On the nose, it displays a clearly varietal profile, of medium intensity, with notes of fennel, fine herbs, white flowers, pear, and peach. It does not seek great aromatic explosiveness, but rather a more elegant, defined, and complex character.
On the palate, it is rich, fresh, and very creamy, with a long, rounded finish. Its good acidity, together with lees aging, allows it to remain fresh over time and preserve all its aromatic complexity. It is a wine that can be enjoyed even 24 to 30 months after the harvest, while keeping its personality intact.
