Dominio de Tares Cepas Viejas is a red Crianza wine from the DO Bierzo, made 100% from Mencía grapes sourced from old vines over 60 years old on slopes with decomposed slate soils, at around 600 meters of altitude. Hand-harvested, fermented with natural yeasts, and aged for 10 months in French oak barrels, followed by around 18 months of bottle aging. It shows an intense ruby color, with aromas of red and black fruit (plums, blackberries), spices, hints of licorice, cocoa, and a mineral background. On the palate it is elegant, structured, with ripe, polished tannins, good acidity, a medium-to-full body, and a persistent finish. Perfect to pair with roasted meats, stews, aged cheeses, or Iberian ham.
