THE ART OF CRAFTING ALCOHOL-FREE WINES WITH QUALITY AND CHARACTER
Can you really enjoy an authentic wine… without alcohol?
The answer is yes, but it's not simply a matter of "removing the alcohol" from wine. Behind a good alcohol-free wine lies science, sensitivity, and a meticulous technical process that begins long before fermentation.
Removing alcohol without losing the soul of the wine is one of the great challenges in winemaking today. Alcohol provides body and persistence on the palate. Removing it alters the organoleptic balance, so precise work is required from the very start to preserve the wine's essence.
It all begins in the vineyard: choosing aromatic varieties with good acidity and balanced tannins (in the case of reds) is essential so the wine retains structure and personality once dealcoholized.
There are various techniques for removing alcohol from wine, each with advantages and limitations depending on the type of wine and the desired profile. Among the most commonly used are:
• Vacuum evaporation, which lowers alcohol's boiling point so it can be removed at lower temperatures, though it can lead to some loss of aromas.
• Reverse osmosis, where the wine is passed through membranes that separate the alcohol from the other components; it requires several stages to preserve aromas and structure.
• Steam distillation, a more traditional technique, less precise and more aggressive toward volatile compounds.
• And one of the most advanced: the Spinning Cone Column. This system, based on introducing steam at low temperatures into a rotating column, allows the alcohol to be separated while minimizing thermal impact and preserving varietal aromas. These aromas are then reintegrated, achieving a wine with less than 0.5% alcohol that respects the original profile and retains complexity and authenticity.
Demand for these wines is on the rise: more and more people are choosing them for health reasons, moderation, or simply as a refined everyday alternative.
